  • Make the dough. Mix flour, eggs, and salt until a shaggy dough forms.
  • Knead. Knead until smooth and elastic.
  • Rest. Wrap and rest to relax the gluten.
  • Roll out. Roll to your preferred thickness.

  • Cook. Boil in salted water until just tender.
  • Sauce + serve. Toss immediately so the pasta absorbs flavor.
